I love a good vegan baking session so much that I do it all day, every day! I would like to share a recipe for a healthy apple crumble. Start by preheating the oven to 180 degrees Celsius (360 degrees Fahrenheit). Lightly spray a baking or pie dish with cooking spray. Peel, core and chop six apples into 1.5 cm cubes and transfer them to a bowl. Add 200 grams of berries, 6 grams (1 tablespoon) of orange zest, 15 grams (1 tablespoon) of corn flour, 2 grams (1 teaspoon) of ground ginger, 2.5 grams (1 teaspoon) ground cinnamon, a pinch of nutmeg, and 45 milliliters (3 tablespoons) of maple syrup. Mix everything together and press firmly and evenly into the baking dish. To prepare the crumble topping, combine 75 grams of oats, 75 grams of chopped nuts and 2.5 grams (1 teaspoon) of ground cinnamon in a small bowl. Create a well in the middle and pour in 30 milliliters (2 tablespoons) of maple syrup and 15 milliliters (1 tablespoon) of coconut oil. Stir until everything is completely combined. Add the crumble topping over the fruit mixture in an even layer and bake for 50–60 minutes, until the crumble topping is lightly golden. Let it cool for 20 – 30 minutes prior to serving.
